Ready to discover another Italian classic you can prepare in just minutes? Scaloppine with mushrooms is the perfect dish for when you want an elegant, flavorful, and incredibly comforting meal. I'll guide you step by step through this main course, which combines the tenderness of the meat with the rich, enveloping flavor of mushrooms.

Ingredients:

  • 170g of veal slices
  • 250g of mushrooms
  • 80g of butter
  • 40g of white wine
  • 00 flour to taste
  • thyme to taste
  • salt to taste
  • pepper to taste

Preparing ingredients

1 Clean the mushrooms if necessary and cut them into slices about 3mm thick. 2 Remove the thyme sprigs and set them aside for later. 3 Melt half the butter in a pan over medium heat.

Preparing the escalopes

4 Add the mushrooms, salt, and pepper to the pan and cook occasionally. When they begin to wilt and brown, add the thyme. Cook until the mushrooms are a deep golden brown, then transfer 5 to a separate bowl. At this point 6 you can flour the veal slices on both sides.

Cooking saltimbocca alla romana

Melt the remaining butter in the same pan as the mushrooms 7 cook the salted and peppered scallops over medium-high heat for about 3-4 minutes per side. Finally 8 reduce the white wine in the pan 9 add the mushrooms, letting them brown in the pan. Serve the scallops piping hot and enjoy!

Advise

  • Mushrooms : You can use any mushrooms you like, such as mushrooms, chanterelles, or porcini mushrooms. The important thing is to clean them thoroughly, if they're dirty, with a cloth, brush, or a small knife to trim them. Never wash them.
  • Thyme or parsley : Parsley is usually added at the end, but I prefer thyme. You can use any herbs you like, such as rosemary.
  • Creamy dressing : If you like, you can blend half of the cooked mushrooms for a creamier, smoother sauce.
